The mycelium
If you see a group of mushrooms growing in the forest, that’s just the fruit that’s formed above the ground. The largest part of the fungus is below ground: this is the network of fungal threads, called the mycelium. The mycelium spreads through long threads and can cover a large surface.
The mycelium can already arise from a single spore. These are produced by the mushroom above the ground and so the fungus spreads. When you start growing mushrooms at home, you’ll get a container with a nutrient medium containing the mycelium. From this the mushrooms will grow.
Fungi therefore reproduce in an asexual manner. But that’s not the mycelium’s only job. The network of wires absorbs nutrients from the soil. It breaks down organic material into smaller particles which are then returned to the soil. The mycelium helps to keep the soil healthy because it has a filtering function and works together with plants and trees in the environment (symbiosis). That’s why fungi are so important in an ecosystem.
How are truffles created?
As described above, mushrooms are the above-ground fruit bodies of the fungus. But what are truffles? These are not the famous truffles that are worth a lot of money and are found by pigs. The truffles in question are also formed by the mycelial network.
These magic truffles are sclerotia. These also form underground and are fruiting bodies. The mycelium forms truffles when conditions are poor for a while. For example, it has not rained for a long time or there are few nutrients available. The truffles are then formed as an underground store of extra nutrients. So it’s a storeroom for when the regular food runs out, making it easier for the fungus to hold out a little longer.
Truffles look different than magic mushrooms. Mushrooms have the familiar shape: a nice round cap on a stem. Truffles look like small irregularly shaped hunks. They are tougher and contain less moisture than mushrooms. This makes them a bit hard to chew if you were to eat them raw.
Just like there are different kinds of mushrooms (for example Mexican, Thai, McKennaii or Colombian), there are different kinds of truffles.
